This will be the easiest family meal of your week!

I absolutely love this recipe because you can make it so many ways, and it is always easy.  It can be as quick and simple as you want it, or as fancy and homemade as you wish.  It’s great! My whole family loves it, and asks for it on a regular basis.  Taco Tuesdays would hardly be the same without this recipe!

Falling Day’s Chicken Taco

  • Chicken thighs (boneless, skinless)
  • Salsa
  • Taco seasoning
  • You’ll also need a slowcooker

 

Let’s talk in ingredients.  On the easiest end of the spectrum, you buy your chicken thighs, one of those taco kits, mix it all together and away you go.  And if you’re fancy, you can make your own salsa and taco seasoning. You can use any kind of homemade or store-bought salsa.  We use this recipe probably once a week, so it’s great to be able to mix it up!

After you’ve figured out your ingredients, and mixed them in the slow cooker, set it on low for eight hours, and by dinner time, it will be done!  All you have to do is shred the chicken (it basically just falls apart) and get your fixings ready.  We typically have it with soft tortilla shells, rice, chopped tomatoes, plain yogurt, and shredded cheese.  Sometimes we go wild and eat it in a salad, or a rice bowl!

It’s perfect for bringing leftovers to work in a thermos with a salad bag.

  • Directions: Throw it in the crockpot, give a little stir and cook on low for 8 hours.  When done, shred it and serve it will all your fixings.
