This sweet, no-knead bread is a great way to celebrate the harvest season! You can make it absolutely anytime of course (it’s popular at brunches), but if you’re looking to infuse a little Kitchen Magic into your Lammastide, this is a great recipe. One thing though, this recipe is approximate. You have to kind of feel your way through it, at least, that’s what I do. I’ll try and put accurate amounts to the ingredients.
Lammas No-Knead Bread
Ingredients
- a wee bit more than 1 cup of whole-meal flour
- a little more than 1/3 cup of all purpose flour
- 1 tsp baking soda
- 2tbsp + 2tsp of brown sugar
- a little more than a 1/4 cup of cold butter, cube it
- about 3/4 cup of figs, fresh if you’ve got em, dried if not
- a little less than 1/2 cup of hazelnuts
- about 1 & 1/4 cup of buttermilk
- some seeds and oats to decorate the top
Directions
- Preheat your oven to a loving 350F
- Butter up a loaf pan
- Mix together the flours, the baking soda and the baking soda in a bowl.
- Rub the butter cubes into the flour-mix with your fingers.
- Mix in the figs and the hazelnuts.
- Add the buttermilk. This part can be tricky. You want the dough to be sticky. Pour in enough buttermilk that it’s wet and sticky.
- smooth out the top and sprinkle on your oats and seeds.
- Bake for about 50 minutes
- Leave to cool in the loaf pan for about 5 minutes, then turn out and let it continue to cool on a baking rack.
This yummy, sweet bread is great sliced up with apples, cheese, or some fresh butter. I usually leave a little out for the spirits of my soul and house.
Too late for Lammas, but will definitely be making this for Mabon,
if not before! 🙂

I usually make it with my first and last harvest of the year. The Sabbats never seem to line up quite with things here. 🙂
